A couple nights ago I made a homemade gluten free pizza with lots of fresh veggies and some blackberries for snack. The pizza crust was a boxed mix (with no preservatives or additives and gluten free). For toppings I used a variety of peppers along with diced tomatoes, mushrooms and gluten free spaghetti sauce. My stomach was happy because it was not upset (I can’t eat gluten since have celiac disease) and I just felt good about eating healthy vegetables and fruits and my daughter ate it too. She did pick off some of the vegetables on the pizza, but on the whole we had a healthy dinner. I have really been trying to eat better lately, adding lots of fruits and vegetables to our meals and limiting sugary snacks. Yummy!
